A hydrosol is distilled water or flower water obtained by steam distillation of an aromatic or medicinal plant to produce an essential oil. During the distillation process in a still, the aromatic molecules of the distilled raw material are carried away by water vapor, condense and collected in the decanter. The resulting distillate consists of the supernatant essential oil and distilled water, in which a small part of the essential oil has dissolved.
A hydrosol is not as effective as an essential oil, however, since it is composed of water (flower water), it retains water-soluble odorant molecules and remains slightly fragrant, having certain therapeutic properties.
There are references to lavender in ancient texts. Dioscorides’ De materia medica is reminiscent of lavender, which we find a little later in the Orphic Argonautica, an anonymous text from the 3rd century AD. In fact, the therapeutic value we attribute to the wonderful lavender and aspic today is equivalent to that attributed by the ancients to stochade.
