- Origin: Presumably the sailor Gonzalo de Percarteguy brought the plant called Gorria, which is called “the red” in the Basque language, from his crusades around 1523 to the Espelette region
- The original: When purchasing, you should pay attention to the protective seal with the AOP (Appelation d’Origine Protégée) marking. This stands for the controlled designation of origin of the exclusive pods
- Storage: at Boomers, the Basque speciality is offered as a coarsely ground chili powder in the traditional glasses. As these are sealed but translucent, they should be stored in a dark, dry place
